Beef Birria Tacos

Completely gluten-free and nut-free, this dish features tender, slow-braised beef infused with bold flavours from Guajillo and Pasilla peppers, tomatoes and smoky chipotle. The Ingredients
  • 2-3 lb - braising beef (Blade, Inside Round, or Brisket)
  • 2 - guajillo peppers
  • 4 - pasilla peppers
  • 1 - small can tomatoes
  • 2 tbsp - chipotle peppers
  • ¼ cup - red wine vinegar
  • 1 tbsp - ground coriander seeds
  • 2 cups - water
  • Salt and pepper
  • Step 1

    Toast the pasilla and Guajillo peppers for a couple minutes to activate the oils and aromas.

    Remove stems and seeds.

  • Step 3

    Add 1 can of tomato and chipotle peppers to a pot.

  • Step 4

    Add the rest of the ingredients and the peppers.

  • Step 5

    Let it cook together for about 45 minutes.

  • Step 6

    Use hand blender and smooth it out.

  • Step 7

    Sear your beef. Keep whole if possible.

  • Step 8

    Add to oven-safe pan or slow cooker and add the Birria sauce.

  • Step 9

    Keep some of the sauce mixture to the side and add water to it so you can dip your corn tacos in it when you are ready to toast.
