Caprese Style Chicken Breast
- 1 tbsp. extra-virgin olive oil
- 1 lb. boneless skinless chicken breast
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 2 tbsp freshly torn basil
- 4 slices of fresh mozzarella
- Salt and pepper
- Step 1
In a large frying pan over medium-high heat, heat oil.
- Step 2
Season chicken with salt and pepper and cook until golden and cooked through (165*F), 6 minutes per side.
- Step 3
Remove and set aside.
- Step 4
Add balsamic vinegar to skillet, then add garlic and cook for 1 minute.
- Step 5
Add tomatoes and season with salt.
- Step 6
Let simmer until soft, 5 to 7 minutes, then stir in basil.
- Step 7
Return chicken to skillet and nestle in tomatoes.
- Step 8
Top with mozzarella and cover with a lid to melt.
- Step 9
Spoon tomatoes over the chicken.
- Step 10
Serve with potatoes or rice.
