Chocolate Chip Cookies

This week Ste. Anne’s Bakery is featuring their gluten-free chocolate chip cookie – they are non greasy, slightly crispy on the edges and perfectly sweet.

Yields 7 Dozen Cookies


The Ingredients
  • 2 cups butter
  • 3 ¼ cups brown sugar
  • 3 eggs
  • 2/3 cup sorghum flour
  • 1 cup rice flower
  • 2/3 cup tapioca starch
  • ½ cup garbanzo bean flour
  • ½ cup cornstarch
  • ½ cup arrowroot starch
  • 2/3 cup potato starch
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 4 cups dark chocolate chips
  • 2 tsp vanilla
  • ½ tbsp xanthan gum
  • Step 1

    Cream butter and brown sugar together until they are well combined and no pieces of butter are left visible.

  • Step 2

    Add eggs and vanilla into the butter mixture and mix until everything is incorporated.

  • Step 3

    In a separate large bowl, combine all other ingredients and mix thoroughly.

  • Step 4

    Add flour mixture to the butter and egg mixture; mix until combined.

  • Step 5

    Scoop cookies onto a parchment-lined baking tray 2 inches apart.

  • Step 6

    Bake at 300ºF for approximately 10-12 minutes or until golden on the edges.
