Cresto Di Gallo Pesto Pasta

This recipe combines cresto di gallo pasta with a homemade basil pesto and finished with crispy guanciale and fresh sorrel greens for a delightful meal that serves the whole family!
Serves 4
- pine nuts - ¼ cup
- lemon juice - 2 tbsp
- garlic - 2 cloves
- salt - to taste
- black pepper - to taste
- basil leaves - ½ bunch
- extra virgin olive oil - 50 ml
- parmesan - ¼ cup
- cresto di gallo pasta - 20oz
- guanciale - 2oz
- parmesan - 2oz
- sorrel greens - 2oz
Can substitute bacon or pancetta if guanciale can’t be sourced.
- Step 1
In a blender place the pine nuts, lemon juice, garlic, salt, pepper, basil leaves and parmesan.
- Step 2
Blend and slowly add olive oil to emulsify the pesto.
- Step 1
Boil cresto di gallo pasta until al dente.
- Step 2
Drain the water, add pesto and toss pasta gently.
- Step 3
Portion 4 equal servings into pasta bowls and top with grated parmesan and micro greens.
