Early Summer/Spring Fennel & Strawberry Salad
- 1 head fennel shaved thin
- 1/2 cup strawberries sliced thinly
- 1/4 head raddichio juliennev
- 1 cup arugula
- 1/2 head of Belgian endive, whole leaves picked
- 75ml cup olive oil
- 50ml white balsamic
- 25g 85% or darker chocolate, grated
- Salt and Pepper
- Step 1
In a bowl, whisk together balsamic and olive oil and season.
- Step 2
Mix fennel, arugula, raddichio and arugula in a bowl and toss in the vinaigrette.
- Step 3
On a plate lay the endive leaves on the bottom, place the rest of the salad on top of the endive.
- Step 4
Lay the strawberries over the rest of the salad and sprinkle with the dark chocolate.
