Early Summer/Spring Fennel & Strawberry Salad
The Ingredients
  • 1 head fennel shaved thin
  • 1/2 cup strawberries sliced thinly
  • 1/4 head raddichio juliennev
  • 1 cup arugula
  • 1/2 head of Belgian endive, whole leaves picked
  • 75ml cup olive oil
  • 50ml white balsamic
  • 25g 85% or darker chocolate, grated
  • Salt and Pepper
  • Step 1

    In a bowl, whisk together balsamic and olive oil and season.

  • Step 2

    Mix fennel, arugula, raddichio and arugula in a bowl and toss in the vinaigrette.

  • Step 3

    On a plate lay the endive leaves on the bottom, place the rest of the salad on top of the endive.

  • Step 4

    Lay the strawberries over the rest of the salad and sprinkle with the dark chocolate.
