Gluten-Free Vegan Waffles

It’s still maple syrup season around here and there’s no better way to celebrate than with a comforting plate of waffles topped with a warm, fruit-filled compote. These gluten-free vegan waffles are simple to make, naturally sweetened and perfect for slow mornings or weekend brunch. Paired with our apple cherry compote and a drizzle of local maple syrup, it’s a seasonal treat you’ll want to enjoy long after the sap stops flowing!
- 4 cups oat flour
- 1 ripe banana (the riper, the better)
- ½ tsp ground cinnamon
- 6 tsp brown sugar
- ½ tsp vanilla extract
- Oat milk (add gradually to reach desired batter consistency)
- Step 1
In a large bowl, mash the banana into a smooth paste.

Add oat flour, cinnamon, brown sugar, and vanilla extract to the bowl. Mix well.

Slowly add oat milk, stirring until the batter reaches your preferred thickness.

Pour the batter into a preheated waffle iron. Cook until golden brown or until your waffle maker signals it’s ready.
- 2 apples, peeled and chopped
- ¼ cup maple syrup
- ½ tsp cinnamon
- Zest and juice of ½ lemon

Combine all ingredients in a small saucepan over medium heat.

Simmer, stirring occasionally, until the fruit softens and the sauce thickens enough to coat the back of a spoon, or until it reaches your desired consistency.
