Pesto Pasta with Salmon and Prosciutto

Transport the flavours of Ste. Anne’s to your kitchen with our Pesto Pasta recipe! Crafted with our Ste. Anne’s Pesto, available at our bakery, this delightful dish combines pesto-tossed pasta with pan-seared salmon and crispy prosciutto.

Serves 2

The Ingredients
  • 160g of pasta of your choice
  • 2 tbsp Ste. Anne's Pesto
  • 12 cherry tomatoes
  • 12 pcs mini bocconcini
  • 4 strips of prosciutto
  • 2 - 4-6oz salmon fillets
  • 1tbsp butter

Can substitute our Ste. Anne’s Pesto with our Spicy Pesto if you like some heat.

  • Step 1

    Bring a large pot of salted water to a boil and preheat the oven to 375°.

  • Step 2

    Lay prosciutto flat on a tray and bake until crispy.

  • Step 3

    Cook your pasta in the salted water for about 1 minute less than indicated on the packaging.

  • Step 4

    Drain and reserve 2 tbsp of pasta water.

  • Step 5

    Preheat a large pan and season fish with salt and pepper.

  • Step 6

    Add a bit of oil to the pan and sear the fish, skin side down for about 2-3 minutes.

  • Step 7

    Flip and add tomatoes to the pan, transfer to the oven and cook a further 6-8 minutes, depending on the thickness of the salmon and your oven. Salmon should be hot throughout, but maintain a small amount of pink in the middle

  • Step 8

    Take salmon out of the pan and set aside.

  • Step 9

    In the pan with the tomatoes, add the noodles, pasta water and butter and toss to combine.

  • Step 10

    At the very last minute add the pesto and toss to evenly coat the noodles.

  • Step 11

    Serve in a large bowl garnished with the bocconcini, crispy prosciutto and some fresh basil.

  • Step 12

    Lay salmon on top and enjoy!
