Pumpkin Blondies
With pumpkin spice season upon us, this will become your most craved recipe of the season!
- 1 & 1/3 cup all purpose flour
- 1 tsp ground cinnamon
- 1 & 1/8 teaspoon baking soda
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 egg
- 2 tsp vanilla extract
- 540 ml pumpkin puree
- 1 tbsp pumpkin spice
- 1 cup unsalted butter
- 3/4 tsp salt
Please note that extras like Walnuts or Chocolate Chips can be added to the top while baking for your own twist

Preheat oven to 350 F.
- Step 2
Line bottom and sides of a 9 X 13 pan baking pan with parchment paper, leaving an overhang on all sides.

Grease with non-stick cooking spray.
- Step 4
In a medium bowl whisk together flour, pumpkin pie spice, cinnamon, baking soda and salt then set aside.

In a mixer bowl cream butter with white and brown sugar on high speed until smooth.

Beat in egg and vanilla.
- Step 7
Beat in pumpkin puree. If the mixture looks curdled, do not fret. Reduce the speed to low and mix in dry ingredients until just combined.

Spread batter evenly in prepared pan.
- Step 9
Bake until edges begin to pull away from sides of the pan and a toothpick inserted in center comes out with just a few moist crumbs (35-40 mins)
- Step 10
Cool completely in pan before removing to be served.
