Roasted Corn Salsa
Don’t let summer go just yet with this delicious Roasted Corn Salsa recipe! This salsa is perfect as an appetizer with tortilla chips or a topping for chicken.
- 6 cobs of corn
- 1 jalapeno
- 2 tomatoes
- ½ red onion
- juice of 2 limes
- zest of 1 lime
- salt and pepper to taste
- 60ml olive oil
- 30ml canola oil
- Step 1
Preheat your grill to high heat.
- Step 2
Rub the corn and the jalapeno with the canola and cook on the grill until lightly charred all around.

Set aside to cool
- Step 4
Small dice the tomato and onion to about the size of a kernel of corn and set in a bowl.
- Step 5
Finely brunoise the jalapeño and slice the corn off of the cob.
- Step 6
Mix in the bowl with the tomato and onion.
- Step 7
Add the lime juice, zest and olive oil.
- Step 8
Season to taste with salt and pepper.
- Step 9
Serve with tortilla as an appetizer or on chicken breasts as an entrée.
