Savoury Cheesecake
Celebrate the holiday season with our Savoury Cheesecake recipe! This appetizer features a toasted pistachio crust, a garlic and herb goat cheese filling and topped with an apple cranberry compote that will surely add warmth and joy to your holiday table.
- 1 cup toasted pistachios
- 2 tbsp melted butter
- ½ tsp salt
- 200g of goat cheese
- 200g cream cheese
- 1 tbsp garlic shallot confit
- 4 sprigs thyme (leaves removed and chopped)
- 2 sprigs rosemary (leaves removed and chopped)
- 1 tbsp chives chopped
- 1 pinch salt
- 1 honey crisp apple (peeled and diced)
- 500g cranberries (fresh or frozen)
- 4 sprigs thyme
- 1 cinnamon stick
- zest and juice of one lemon
- 1 1/2 cups sugar
- 1/2 cup water
- 1 tbsp salt
- Step 1
Place nuts and salt into a food processor and pulse until nuts are roughly chopped.
- Step 2
Begin adding butter slowly until nuts begin sticking together, similar to graham cracker crust.
- Step 3
Place nut mixture into a lined 4” springform pan and press evenly around the base (Approx. ¼ inch).

Place the crust into the fridge and let it firm up slightly.

Break up cheese into small pieces and place into a bowl to soften.

Once Softened (cheese has to be quite soft), add the remaining ingredients.

Mix very well and pour the mix into the prepped crust.

Ensure the cheese mix is even (no air pockets).
- Step 5
You can tap the pan lightly on the table to help the air rise to the top.

Using an offset spatula or spoon, even out the top to create a smooth, even surface.

Place in freezer to let set up and to make cutting easier.

Cut with a hot knife.

Finely chop equal parts of shallot and garlic and place them in a pot.
- Step 2
Cover with canola oil (any neutral oil will work).
- Step 3
Simmer on low heat until the mix turns a golden brown colour.
- Step 4
Let cool.
- Step 1
Place all ingredients into a pot and bring to a light simmer.
- Step 2
Once apples have almost broken down or thick bubbles appear on top, remove them from heat and let them cool.
- Step 3
Remove thyme stems and cinnamon sticks.
