Ste. Anne’s 5 Seed Mushroom Toast
Our Chef Stephen’s mushroom toast recipe is a satisfying meat-free meal on days when you need something easy to make!
Serves 2
- 3 pieces Ste. Anne's 5 Seed Bread
- 1lb mushrooms of choice, shiitake is recommended
- 1 sprig thyme
- 1.5 tbsp butter
- 1 shallot
- 2 cloves of garlic
- 1 ball of burrata
- 5 tbsp good quality olive oil
- 5g fresh basil
- 1.5 tbsp canola oil
- Step 1
Remove the burrata from the fridge and allow it to come to room temperature for about 2 hours before starting the rest.

Finely brunoise the shallot and the garlic.
- Step 3
Remove the stem from the mushroom and thinly slice.
- Step 4
On medium heat, add the canola, shallot, and garlic in a large skillet.
- Step 5
Cook for about 4-5 minutes, stirring constantly, once the shallots are translucent, add the mushrooms and the butter. Cook until mushrooms are soft and tender.

Remove thyme leaves from the stem and sprinkle them into the mushrooms.

Toast your bread and cut it into triangles.
- Step 8
Arrange 3 pcs of bread per plate.
- Step 9
Spoon the mushroom mix over the bread.
- Step 10
Roughly tear the basil over the mushroom.
- Step 11
Carefully add 1/4 pc of burrata on top and drizzle the whole thing with olive oil (be generous).

Finally, season the burrata with coarse sea salt (Maldon is recommended) and pepper to finish.
