Warm Artichoke Salad
Treat your palate to the inviting flavours of our Warm Artichoke Salad recipe! Crafted with a base of warm roasted artichoke and garlic puree, this salad is perfect for winter appetizers or lunches.
- 6 cherry tomatoes sliced in quarters lengthways
- 10g shallots brunoise (finely diced)
- 10g toasted sliced almonds
- handful of frisée
- shaved parmesan (garnish)
- 1 tbsp orange vinaigrette
- 3 oranges juiced
- 1 tbsp dijon smooth
- 2g black pepper
- 4g salt
- 1 clove garlic
- 1 cup vegetable/olive oil
- 5ml apple cider vinegar
- 2 oz yogurt
- 4g salt
- ¼ cup water
- 10g roasted garlic
- 1 tbsp brown sugar
- 5ml lemon juice
- 1 cup bottled artichoke hearts
- Step 1
4 to 1 ratio water to farro.
- Step 2
About 45 minutes to cook.

Add salt to the water.

Start your base with warm roasted artichoke and garlic puree.
- Step 2
Toss sautéed frisée and cherry tomatoes with blood orange vinaigrette.
- Step 3
Top base with sautéed farro and shallots, toasted sliced almonds and finished with frisée and cherry tomatoes.
- Step 4
Add a little touch of shaved parmesan and your favourite garnish to top it off.
