Warm Artichoke Salad

Treat your palate to the inviting flavours of our Warm Artichoke Salad recipe! Crafted with a base of warm roasted artichoke and garlic puree, this salad is perfect for winter appetizers or lunches.

 


The IngredientsFor The Frisée and Cherry Tomato Salad
  • 6 cherry tomatoes sliced in quarters lengthways
  • 10g shallots brunoise (finely diced)
  • 10g toasted sliced almonds
  • handful of frisée
  • shaved parmesan (garnish)
  • 1 tbsp orange vinaigrette
For The Orange Vinaigrette
  • 3 oranges juiced
  • 1 tbsp dijon smooth
  • 2g black pepper
  • 4g salt
  • 1 clove garlic
  • 1 cup vegetable/olive oil
  • 5ml apple cider vinegar
For The Roasted Artichoke Hearts
  • 2 oz yogurt
  • 4g salt
  • ¼ cup water
  • 10g roasted garlic
  • 1 tbsp brown sugar
  • 5ml lemon juice
  • 1 cup bottled artichoke hearts
Orange Vinaigrette
  • Step 1

    4 to 1 ratio water to farro.

  • Step 2

    About 45 minutes to cook.

  • Step 3

    Add salt to the water.

Plating
  • Step 1

    Start your base with warm roasted artichoke and garlic puree.

  • Step 2

    Toss sautéed frisée and cherry tomatoes with blood orange vinaigrette.

  • Step 3

    Top base with sautéed farro and shallots, toasted sliced almonds and finished with frisée and cherry tomatoes.

  • Step 4

    Add a little touch of shaved parmesan and your favourite garnish to top it off.
